Virginia Holsinger, PhD

Virginia Holsinger, PhD, was an American chemist and dairy researcher at the U.S. Department of Agriculture. Her accomplishments include developing a whey-soy drink mix that serves as a milk substitute in international food donation programs. Her research on the lactase enzyme led to the development of LactAid, a milk product for lactose-intolerant people. Her work also led to the development of a natural mozzarella cheese with half the fat of previous products. In 1995, Holsinger received the Women in Science and Engineering (WISE) Lifetime Achievement Award from the Agricultural Research Service.
